Hot Potato Salad Recipe

One of our favorite side dishes to make (and bring!) is the classic potato salad. While we usually think of summertime picnics when eating this delicious dish, we definitely eat this all year round. Though the weather outside may still be a little chilly, bring a little summertime to your day with our potato salad recipe. Our version adds a dash of pancetta, peas and a little heat to warm you up – it’s the perfect blend of creamy, spicy, and savory!

10 Red Bliss potatoes
1 cup mayo
1/2 cup Dua Belibis chili sauce
1/4 cup dill pickle relish
3 eggs, hardboiled and chopped
1/2 red onion, diced
1 tsp paprika
1 cup green peas, cooked
3 cups pancetta, diced and rendered
1 bunch green onion, chopped (for garnish)

•Rinse and boil the potatoes til tender
•Cut the boiled potatoes into quarters and set aside
•In a clean bowl add the mayo, Dua Belibis chili sauce, relish, chopped hardboiled eggs, red onion, paprika, cooked green peas and cooked pancetta
•Mix evenly and add the potatoes
•Garnish with chopped green onions when ready to serve
