At Komodo, we love bringing flavors and cultures together. One of our go-to dishes is chilaquiles, which is a popular Mexican comfort food. Made with home-made tortilla chips, a spicy red sauce, scrambled eggs, and Cotija cheese, we’ve added our signature Asian flavors to the sauce to amp up the flavor.
Already spicy from the three types of chiles we’ve put into our sauce, we’ve also added the Indonesian chili sauce, Dua Belibis, into the mix to bring up the spice level! Make this for breakfast, and be sure to have a glass of milk on hand!
3 eggs, scrambled
20 corn tortillas, cut into quarters
3 cups water
3 whole Gaujillo chilis, dried
3 whole Ancho chilis, dried
3 whole Chipotle chilis, dried
2 bay leaves
1/2 red onion, sliced
6 garlic cloves
2 tbs Dua Belibis chili sauce
1 tbs Cotija cheese
1 bunch cilantro, chopped (for garnish)
•In a non-stick pan, scramble the eggs and set aside when done
•Cut the corn tortillas into quarters and deep fry until crispy golden brown. Once removed from oil, salt and pepper the chips; set aside to cool
•In a medium sauce pan add the water, chilis, onion, and bay leaves; bring all to a boil for about 10-15 minutes
•When the sauce mixture is done boiling, transfer to a blender and add the Dua Belibis; blend until fully mixed
•When ready to serve, toss the tortilla chips with the sauce and Cotija cheese before placing on a serving dish
•Add the scrambled eggs, sprinkle any remaining cheese, and top with chopped cilantro
